My menu plan is a bit eclectic for this week. It’s more of a list of recipes I want to make . . . but there is no possible way I will be able to get to all of them this week. I don’t have them scheduled or listed for certain days. This is Jason’s work week so I will mostly be cooking for myself . . . so I can just decide what sounds good when I’m hungry.
I’ve been browsing tons of recipes recently, and I have found quite a bit of inspiration. There are just too many yummy-looking recipes to try!!
Buttermilk Quinoa Pancakes - I made these last week and still have a few left over.
Quinoa with Peaches and Creamy Yogurt – I’m on a bit of a quinoa kick these days. I enjoy the taste of quinoa, and it’s a better alternative than grains and oatmeal for me right now (due to some dietary restrictions).
Crockpot Egg Casserole – This is in my crockpot right now! I’m sure I will have plenty of leftovers to enjoy it for several days.
Sprouted Lentil Salad – This is my first adventure with sprouted anything; I saw this recipe and thought it looked like it might be good. I have my lentils all sprouted and ready to go. I need to pick up a few more ingredients at the store to finish off the salad. I’m taking this to a 4th of July party; I’m not sure it will be a big hit but my mom wants to taste it too so I’ll take it just for her.
Seven-Layered Salad – This also looks yummy! I want to give this a try. I’ve been enjoying salads recently and this looks like a fun way to make individual-sized servings.
Whole Wheat Calzones – I’ve been wanting to make calzones for a while. I’m thinking about giving this a try this week. I’ll probably eat a few and then stick the rest in the freezer.
Leftover kabobs – Jason and I grilled meat/veggie kabobs last week. I still have some of those leftovers in my fridge.
Marinated Chicken – I have one chicken breast sitting in my fridge marinating. I’ll be cooking that up sometime this week.

Melinda, I pinned that sprouted lentil salad. Sounds delicious! I used to sprout mung beans and use them in salads, but haven’t done that for a while. I love lentils. I’m going to give this one a try. ~~Rhonda
